This blend of equal proportions of Chardonnay, Pinot Noir and Pinot Meunier is aged for 60 months on its lees during second fermentation in bottle, which is far longer than the average in Champagne. It is also blended with around 40% of reserve wine averaging 10 years old. The long ageing time in the lees and high proportion of reserve fruit give good depth and a very pleasant biscuity complexity to the Champagne. It is crisp and dry (3-4g/l dosage) with some richness and gentle, honeyed, nutty flavours.
This is an excellent “reserve”-style Champagne at a very fair price.
The label pays hommage to Vincent Cuillier’s ancestors, the Montgolfier family who invented the hot air balloon. Vincent himself is a very keen hot air balloonist!
