Moss Wood’s Cabernet Sauvignon is for many Australia’s finest Cabernet. It has even been described by Jancis Robinson MW as “the Latour of Margaret River”, which is great praise indeed! It is one of just 22 wines rated ‘Exceptional’ by Langtons Fine Wine based on demand, keeping company with Henschke’s Hill of Grace and Penfold’s Grange. It is by all accounts an Australian Grand Cru!
Winemaker tasting notes
Nose:
An intense array of primary fruit notes, including blueberries, raspberries, red currant, mulberry, plum and musk, as well as a touch of nutmeg, cinnamon and clove spices. Cabernet Sauvignon’s classic floral note of violets adds volume. The complexities in the background include cedar, tobacco and tar, the “cigar box” combination, plus some light toasty oak.
Palate:
The theme of the red and dark fruits continues, with black currant, cherry, blueberry, mulberry and dark jube flavours filling the mouth. They sit over a medium to full body, with bright acidity and soft, well integrated, svelte, almost chocolate-like, tannin. The wine is long and finishes with cedar and toasty oak, with perhaps a touch of star anise.
When to drink?
This wine is very appealing now, with lifted fruit notes and soft round tannins and can certainly be enjoyed as a youngster. However, it will repay long term cellaring and we suggest a minimum of 10 years, to allow it to develop some bottle bouquet. For those who wish to see it at its peak, we recommend aging for at least 20 years.

“The 2021 Cabernet Sauvignon leads with raspberry and red gravel, cassis, cocoa and tobacco, with layers of red apple and licorice, all of it shaped by warm-biscuit oak. The palate has gentle clarity: the length of flavor is very long, but the intensity of this vintage has been turned down. It was an interesting year in the vineyards, with constant rain or drizzle, coupled with moderate temperatures throughout the growing season. It caused some viticultural pressures, which in turn impacted picking decisions; in the end, it was a season defined by extreme vigilance and nimble decision-making. “Medium-deep and very bright red with a strong tinge of purple, but it’s not a very deep colour for cabernet. The bouquet is fresh and red fruit driven with mulberry, violet aromas, mixed dried herbs and fragrant spices. The wine is medium-full bodied, not big but supremely elegant and fine-boned.
