Gaia Wild Ferment Assyrtiko Santorini – 2018

This crisp, dry, fairly full bodied white wine comes from Assyrtiko grapes grown on 80 year old vines on the volcanic island of Santorini. It has amazingly freshness and vibrant acidity for a wine from such a warm climate; a result of the humidity-retaining volcanic soils, cool night time temperatures and deep-rooted old vines. It finishes with a distinctly volcanic saltiness and bite of minerality – one of the finest examples of this noble Greek grape you will find! It will develop and gain in complexity over the next 3-5 years but is already very impressive.
