From 30-60 year old vines grown on a vineyard site first mentioned in 1284(!), this wine is mineral, strong and expressive. It was fermented using natural yeasts, left on its lees for 4 months to gain in complexity, then bottled with no oak ageing. It is fresh and lively with melon, candied pear and orange zest flavours and an easy balance. Very refreshing and satisfying, this would be perfect enjoyed on its own, or to compliment simple seafood or salads. 100% sustainable and suitable for vegans.
