Winemaker Maxime Cheurlin Noellat is grandson of Georges Noellat and related to both Emmanuel Rouget and Henri Jayer, so he has impeccable breeding! He learned his winemaking trade chez Emmanuel Rouget and is one of the rising stars of Burgundy. He has been highly acclaimed by many of the world’s top press including Neil Martin, who is one of his biggest fans.

- Vinification: 80% de-stemmed, 4-8 days cold maceration, 2-3 weeks indigenous yeast fermentation and maceration with pump-overs (punch-downs rare). Aged for 14-20 months.
