Emeline de Sloovere Ephemère No.5 Brut Nature Blanc de Blancs Champagne – 0000

Emeline De Sloovère is the wife of Vincent Cuillier and makes a small but very fine range of Champagnes from her family’s vineyards on the hillsides to the south of Epernay.

Her Ephémère No.5 is sourced from a single vineyard of 60 year old Chardonnay vines on clay limestone soils .  It is a blend of the 2017 harvest and two reserve wines from the 2014 and 2015 vintages from the same plot of vines.

Produced in very limited quantities (just 751 bottles), this cuvée is a true rarity and gives a snapshot of this terroir’s potential.

The grapes are vinified for two years in vats before being bottled, allowing for a deeper and more complex expression of the Chardonnay grape. Blending with reserve wines adds extra depth and a unique aromatic complexity.

This vinification method, combined with the absence of any additives and minimal use of sulphur, allows the terroir to express itself authentically. 

DESCRIPTION
Ephémère No. 5 is characterised by its very long ageing period of 8 years on the lees during its second fermentation in the bottle. It has complex aromas of dried fruit and toasted bread. On the palate, its texture is creamy yet pure, with a long, briny finish, characteristic of its Brut Nature dosage (zero sugar). It is a wine of great maturity, both powerful and refined, as well as purity and elegance.
