Domaine Naturaliste Sauvage Sauv Blanc Margaret River, West Australia – 2017

This is an interesting and very different style of Sauvignon Blanc to those you find elsewhere in Australia or New Zealand, more akin in style to a complex, oak-aged white Bordeaux. It has subtle vanilla and butterscotch oak flavours together with exotic, almost tropical fruit notes and gently refreshing acidity. “Sauvage” describes the wine’s natural style of winemaking, using only wild yeast in fermentation; the result is a greater complexity of flavour and aromas.
