Domaine d’Orfeuilles Vouvray sec Silex – 2020

This biodynamically-certified Chenin Blanc comes from 55-70 year old vines grown on ancient “silex” fossils and stony soils.
It was wild-fermented in a mix of stainless steel tanks (50%) and large old oak casks (50%), where it was left to mature on its lees for 11 months after fermentation.
Bone dry, fresh, rich and complex, with ripe apple fruit flavours and a long and flinty/stony finish. This will develop in bottle until at least 2027.
