Barbadillo La Cilla Pedro Ximenez Sherry

This very sweet sherry is made from 100% Pedro Ximenez grapes. 

It has a dark brown/mahogany colour and aromas of plums, orange peel, nuts, raisins and chocolate. On the palate it is extremely sweet with 350 g/l of residual sugar! There is plenty of lifted acidity to give balance and a long finish. 17.5% alc.

Perfect served with orange-flavoured desserts, poured over vanilla ice cream, or with foie gras.

To make this sweet style of sherry, Pedro Ximenez grapes were picked late in the season, then dried out in the sun to make them very shrivelled and highly concentrated. The grapes were part-fermented, then fortified up to 17.5% alc using local grape spirit. The wine was then matured oxidatively in old oak barrels for several years.
