The 2016 cuvée of this excellent sparkling wine from Morges, just west of Lausanne, is made from 100% Chardonnay and vinified in the classic “methode Champenoise” style. It spent 3 years gaining yeasty complexity on its lees during the important second fermentation in bottle, similar to most well known non vintage Champagnes at a considerably higher price! It is dry and fresh with impressive complexity of bread and brioche flavours combined with zesty, lemon-citrus acidity. It finishes long and leaves a gently nutty, biscuity flavour in the mouth. A seriously good Swiss sparkling wine!
