Vincent Cuillier is a young, rising star of the Champagne world, who produces his Champagnes with maximum respect for the biodiversity of his vineyards.
His vineyard plots are somewhat atypical for the region, containing an exceptionally high percentage of sand, which produces Champagnes marked by real finesse.
This exceptional, biodynamic-certified Champagne comes from one of the northernmost vineyards in the Champagne region, planted on sandy soil. It is a Blanc de Blancs, produced from 100% Chardonnay. It was fermented in barrel, like a white Burgundy, then spent 12 months on its lees in barrel before undergoing its second fermentation in bottle. After a further 2.5 years it was disgorged and bottled without the addition of any sugar (dosage), meaning that it is bone dry.
It has pure and fine citrus and lemon flavours with a gentle, biscuity complexity, silky structure and a long and intense finish which lasts at least one minute on the palate!
